Amaranth and Mango Dal


Growing up, I never liked the green leafy vegetables. But, I used to have a liking for this wonderful dal my mom used to prepare. Today's recipe Amaranth and Raw Mango Dal / Thotakura mamidikaya pappu is a recipe from my mom.

Ingredients: 
  • Tur dal 1 cup
  • Amaranth leaves 1 large cup
  • Medium sized raw mango 1
  • Green chillies 2
  • Red Chillies 1
  • Red chilli powder
  • Mustard seeds 1/2 teaspoon
  • Urad dal 1/2 teaspoon
  • Curry leaves 5
  • Salt to taste
  • Oil 1/4th  teaspoons 
  • Water  as needed
Preparation:
  • Wash and cut the Amaranth leaves into small pieces
  • Peel and cut raw mango into small pieces.
  • Now, in a pressure cooker cook the tur dal, green chillies and amaranth leaves.
  • In a separate bowl, add some water and cook the raw mango into a smooth paste.
  • Lightly mash the cooked dal and leaves with a spatula.
  • In a sauce pan, heat the oil and add the mustard seeds, red chilli and urad dal. Once the mustard seeds start to splatter add the mango pulp and tur dal mixture to the pan.
  • Add salt to taste, red chilli powder to the mixture and some water as needed. Cook for a minute in a medium flame.
  • A very healthy and tasty dal is ready to be served. This dal tastes good with rice, chapathi or roti.
Alterations: 
  • Replace oil used with ghee for a better taste.
Warnings:
  • Be careful when adding the chilies and red chili powder as this makes the rice spicy, adjust according to taste.
