Tamarind Rice or "Pulihora" one of the Andhra favourites! You might be thinking, what's so special about tamarind rice? This recipe I'm going to present here today is from great grand parents and is something I and my family always would cherish eating. I'm sure you will like it too

Ingredients: 
  • Cooked Rice 1 cup
  • Turmeric 1/2 teaspoon
  • Peanuts 40
  • Thick Tamarind Pulp 1 small cup 
  • Ginger 2” piece
  • Green chillies 10
  • Dried Red Chillies 2
  • Mustard seeds 1/2 teaspoon
  • Urad dal 1/2 teaspoon
  • Channa Dal 1/2 teaspoon
  • Curry leaves 10
  • Salt to taste
  • Oil 4 teaspoons 


Preparation:



  • Cut ginger into small pieces and slices chilies vertically into two without splitting them.
  • After the rice is cooked and before it cools down, put it in a big bowl and add a teaspoon of oil and the turmeric to the hot rice and mix without making it sticky.
  • Heat a small pan. Add oil to the pan and once it gets heated up add the mustard seeds, urad dal, chana dal, dried red chilies and peanuts. Fry until the peanuts change into brown color. 
  • Now, add the curry leaves, cut chillies and ginger pieces. 
  • Cover the pan with a lid and let it fry for less than a min in low flame. 
  • When the mixture is still hot, add the fried mixture, tamarind pulp, salt to the yellow rice and mix all the ingredients.
  • Let this sit for at least an hour before you serve
  • A very delicious  and authentic South Indian dish, Tamarind Rice/ Pulihora is ready to be served.
Alterations: 
  • Do not overcook the rice, that will make the tamarind rice sticky.
  • While mixing all the ingredients, use a flat spatula, this will help the rice not to get sticky.
Warnings:
  • Be careful when adding the Ginger and chilies as this makes the rice spicy, adjust according to taste.
